This elegant side is a great accompaniment to pork tenderloin or a grilled skinless chicken breast.

  • 2 tsp. finely chopped fresh parsley (10mL)
  • 2 tsp. grated Parmesan cheese (10mL)
  • 1/4 tsp. grated lemon rind (1 mL)
  • 3/4 lb. asparagus, trimmed (350g)
  • 2 large shallots, cut into thin wedges or 1/3 cup thinly sliced onion (80mL)
  • 1 tbsp. Becel® Buttery Taste* margarine, melted (15mL)

Preheat oven to 425°.Combine parsley, cheese and lemon peel in small bowl; set aside. Toss asparagus, shallots and Becel® Buttery Taste margarine in 13 x 9-inch roasting pan. Roast 15 minutes or until tender.  Arrange asparagus mixture on serving platter, then top with cheese mixture. Season, if desired, with freshly ground black pepper.
