Ingredients


  • 4 egg whites or use 1/2 cup (125 mL) egg substitute
  • ¾ cup (175 mL) buttermilk
  • ⅓ cup (75 mL) Becel® Original margarine, melted
  • 1½ cups (375 mL) all-purpose flour
  • 1½ cups (375 mL) carrots (medium), coarsely grated
  • 1¼ cups (300 mL) bran cereal (not flakes), or muesli cereal
  • ½ cup (125 mL) brown sugar
  • 2 tsp. (10 mL) orange peel, grated or use lemon peel
  • 1 tsp. (5 mL) baking powder
  • 1 tsp. (5 mL) baking soda
  • 1½ tsp. (7 mL) cinnamon
  • ½ tsp. (2 mL) nutmeg
  • ½ tsp. (2 mL) salt

Preparation

Step 1

Preheat oven to 350°F (180°C).

Step 2

In a medium bowl, whisk egg whites (or egg substitute) with buttermilk and Becel® Original margarine until blended. In a large bowl, stir remaining ingredients together until well mixed. Stir buttermilk mixture into flour mixture until well combined. Turn into a lightly greased 13 x 9-inch (3.5 L) rectangular baking pan, smoothing the top.

Step 3

Bake for 15-18 minutes or until a toothpick inserted in the centre comes out clean

Step 4

Cool on a rack. Cut into squares. Store refrigerated in an airtight container
