Ingredients


  • 2 1/4 cups (550 mL) all-purpose flour
  • 1 tsp. (5 mL) baking soda
  • 1/2 tsp. (2 mL) salt
  • 1 cup (250 mL) Becel® Buttery Taste margarine* or margarine Becel® Originale
  • 1 cup (250 mL) firmly packed light brown sugar
  • 1/4 cup (60 mL) granulated sugar
  • 2 large Naturegg™ Omega 3 eggs
  • 1 tsp. (5 mL) vanilla extract

Preparation

Step 1

Preheat oven to 375°F (190° C). Combine flour, baking soda and salt in medium bowl; set aside.

Step 2

Beat Becel® Buttery Taste margarine with sugars in large bowl. Beat in eggs and vanilla until blended. Gradually add in flour mixture; beat just until blended. Add your choice of mix in’s (i.e. chocolate chip, dried fruit, seeds, toffee bits, etc.). Drop by tablespoonfuls on ungreased baking sheets, 2-in. (5 cm) apart.

Step 3

Bake 7 minutes or until edges are golden. Cool 2 minutes on wire rack; remove cookies from sheets and cool completely.

Salted Caramel Cookies: Prepare Anything Goes Cookie Dough and stir in 3/4 cup (175 mL) HERSHEY’S® Chipits® SKOR™ Toffee Bits and 3/4 cup (175 mL) HERSHEY’S® Chipits® Butterscotch Flavoured Baking Chips. Place 1 tsp. (5 mL) coarse sea salt in a small bowl; set aside. Drop by tablespoonfuls on ungreased baking sheets, 2-in. (5 cm) apart. Evenly sprinkle each cookie with a small amout of reserved sea salt. Bake 7 minutes or until edges are golden. Cool cookies on sheets 2 minutes on wire rack; remove cookies from sheets and cool completely. Makes 70 cookies.

Granola Bar Cookies: Line 13 x 9-in. (33 x 23-cm) baking pan with foil leaving 2-inch overhang. Prepare Anything Goes Cookie Dough and stir in 1 teaspoon (5 mL) ground cinnamon. Combine 1 cup (250 mL) chopped dried fruit, such as dried cherries, blueberries and apricots, 1 cup (250 mL) chopped pecans, 1/2 cup (125 mL) rolled oats and 1/2 cup (125 mL) flax seeds. Set aside 1 cup (250 mL) fruit mixture and stir remaining fruit mixture into cookie dough. Spread into prepared baking pan. Top with remaining 1 cup (250 mL) fruit mixture and gently press into dough. Bake 25 minutes or until edges are golden. Cool in pan on wire rack 10 minutes. Using foil overhang, lift out of pan and cool completely. Cut into 24 squares.


Coconut-Lemon Cookies: Prepare Anything Goes Cookie Dough and stir in 2 tablespoons (30 mL) grated lemon peel. Shape into 1-inch (2.5 cm) balls. Roll* in 1-1/2 cups (375 mL) shredded coconut. Arrange on ungreased baking sheets 2-inches (5 cm) apart. Bake 7 minutes or until edges are golden. Cool cookies on sheets 2 minutes on wire rack; remove cookies from sheets and cool completely. Makes 54 cookies. *For an easier variation, just stir in coconut and bake as above.

Triple Chocolate Cherry Cookies: Prepare Anything Goes Cookie Dough and stir in 1/3 cup (75 mL) HERSHEY’S® Chipits® White Chocolate Baking Chips, 1/3 cup (75 mL) HERSHEY’S® Chipits® Dark Chocolate Baking Chips, 1/2 cup (125 mL) HERSHEY’S® Chipits® Pure Milk Chocolate Baking Chips and 1/2 cup (125 mL) dried cherries or cranberries. Drop by tablespoonfuls on ungreased baking sheets, 2-inches (5 cm) apart. Bake 8 minutes or until edges are golden. Cool cookies on sheets 2 minutes on wire rack; remove cookies from sheets and cool completely. Makes 70 cookies.

TIP: For a gluten-free version, simply replace all-purpose flour with 2-1/2 cups (625mL) gluten-free whole grain oat flour, 1/3 (75mL) cup coconut flour and 1/4 (60 mL) cup potato flour.
