Ingredients


  • 1 Tbsp. (15 mL) Becel® Buttery Taste margarine*
  • 2 ears corn-on-the-cob, kernels removed (about 1-1/2 cups)
  • 1/4 cup (60 mL) finely chopped red onion
  • 1 small zucchini, chopped
  • 1 clove garlic, chopped
  • 1/4 tsp. (1 mL) dried oregano leaves
  • 1/8 tsp. (0.5 mL) ground black pepper
  • 1/4 cup (60 mL) fat free reduced sodium chicken broth

Preparation

Step 1

Melt Becel® Buttery Taste margarine in large nonstick skillet over medium-high heat and cook corn with onion, stirring occasionally, until corn starts to brown. Stir in zucchini, garlic, oregano and black pepper and cook, stirring occasionally, 2 minutes. Stir in broth and bring to a boil. Reduce heat to low and simmer covered until vegetables are tender, about 5 minutes.
