Ingredients


  • 2 tsp. (10 mL) Becel® Oil
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 6 cups (1.5 L) reduced sodium chicken stock
  • 1 lb. (500 g) boneless, skinless chicken breasts, cut into 1.25 cm pieces
  • 1 medium tomato, seeded and finely chopped
  • 1/2 cup (125 mL) chopped ripe avocado
  • 1/4 cup (60 mL) coarsely chopped fresh cilantro
  • 2 Tbsp. (30 mL) fresh lime juice
  • 1/8 tsp. (0.5 mL) hot sauce, (or to taste)

Preparation

Step 1

Heat Becel® Oil in large saucepan over medium-low heat and cook onion and garlic, stirring occasionally, until onion is tender, about 3 minutes. Add stock and bring to a boil over high heat. Reduce heat to low, then stir in chicken. Simmer, partially covered, stirring occasionally, until chicken is thoroughly cooked, about 10 minutes.

Step 2

Stir in remaining ingredients just before serving.
