Instructions
For the brownie base:
- Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.
- In a bowl, hand whisk the melted Dairy Free Becel Plant Butter and sugar until smooth. Add the cocoa powder, vanilla extract, and brewed coffee, pumpkin or banana and mix until well combined. Stir in the flax egg.
- In a separate bowl, whisk together the flour, and baking powder. Gradually add this to the wet mixture, stirring until just combined.
- Fold in the vegan dark chocolate chunks or chips.
- Pour the brownie batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out mostly clean with a few crumbs. Let the brownies cool completely.
For the Tiramisu layer:
- In a medium bowl, beat the vegan cream cheese, powdered sugar, Dairy Free Becel Plant Butter, vanilla extract, and coffee extract (if using) until smooth and creamy. Once the brownies have cooled, spread the tiramisu mixture evenly over the top. Lightly dust the top with cocoa powder for a classic tiramisu finish.
Assembly:
- Chill the tiramisu brownies in the fridge for at least 1-2 hours to set the tiramisu layer. Slice into squares and serve chilled or at room temperature.
