Cheesy Mediterranean Scramble

Ingredients
- 3 boxes (125 g ea.) egg substitute
- 1/2 tsp. (2 mL) dried basil, crushed
- 1/8 tsp. (0.5 mL) ground black pepper
- 1 1/2 Tbsp. (22 mL) Becel® Buttery Taste margarine*
- 1 large red bell pepper, finely chopped
- 1 small sweet onion
- 2 Tbsp. (30 mL) crumbled low fat feta cheese
- 6 slices whole wheat bread, toasted

Instructions
- Beat egg substitute, basil and black pepper in medium bowl, with wire whisk or fork; set aside.
- Melt Becel® Buttery Taste margarine in large nonstick skillet over medium-high heat and cook red pepper and onion, stirring occasionally, until vegetables are tender, about 4 minutes. Stir in egg mixture and let set slightly. Stir occasionally until eggs are cooked and set. Sprinkle with cheese. Serve with toast.
